1 lb. Ground beef
5 c. sliced zucchini
1 c. chopped onion
2 large tomatoes
¾ c. chopped green pepper
½ c. water
1 ½ tsp. salt
2 c. corn
¼ tsp. Pepper
2 Tbsp. Chopped pimiento
1 tsp. Chili powder
¼ c. chopped parsley
Sauté beef, onion and pepper in a large skillet until browned. Add remaining ingredients.
Cover and simmer for 15 minutes or until vegetables are tender.
