4 to 6 ripe tomatoes
¼ tsp. salt
½ to 1 c. flour
4 Tbsp. butter
1 Tbsp. Sugar
Prepare tomatoes by peeling and slicing ½-inch thick. Melt butter in heavy skillet. Put flour, sugar, and salt in a pie pan and mix together. Lay tomatoes (one slice at a time) in the flour mixture and turn over to coat the whole slice. Place tomato slices in the hot skillet. Fry about 5 minutes and turn with a pancake turner. Allow to cook until the flour thickens the juice over medium heat. Serve on toast or with fish. Add spices to flour if desired.
