Pumpkin Spice Muffins

INGREDIENTS
1 and ⅔ cups flour
1 teaspoon baking soda
1 and 1/2 teaspoons pumpkin spice
½ teaspoon ground ginger
¼ teaspoon nutmeg
½ teaspoon salt
2 large eggs
2/3 cup granulated sugar
½ cup brown sugar
1/3 cup vegetable oil
1/4 cup applesauce
1 cup pumpkin puree
¼ cup milk
INSTRUCTIONS
Preheat oven to 375°. Spray muffin tins with cooking spray or use paper liners
In a large bowl whisk together flour, baking soda, cinnamon, pumpkin spice, ginger, nutmeg, and salt.
In a medium bowl, whisk together eggs, granulated sugar and brown sugar until combined. Add oil, applesauce and whisk.
Add pumpkin and milk and whisk until combined. Pour the wet pumpkin mixture into the dry mixture and mix gently just until combined.
Divide batter evenly amongst the muffin cups.
Bake for 18-20 minutes until a toothpick inserted into the corner of the muffin comes out clean. Allow to cool for 5 minutes in the pan then transfer to a cooling rack.
