Pumpkin Spice Muffins

INGREDIENTS

  • 1 and ⅔ cups flour

  • 1 teaspoon baking soda

  • 1 and 1/2 teaspoons pumpkin spice

  • ½ teaspoon ground ginger

  • ¼ teaspoon nutmeg

  • ½ teaspoon salt

  • 2 large eggs

  • 2/3 cup granulated sugar

  • ½ cup brown sugar

  • 1/3 cup vegetable oil

  • 1/4 cup applesauce

  • 1 cup pumpkin puree

  • ¼ cup milk


INSTRUCTIONS

  • Preheat oven to 375°. Spray muffin tins with cooking spray or use paper liners

  • In a large bowl whisk together flour, baking soda, cinnamon, pumpkin spice, ginger, nutmeg, and salt.

  • In a medium bowl, whisk together eggs, granulated sugar and brown sugar until combined. Add oil, applesauce and whisk.

  • Add pumpkin and milk and whisk until combined. Pour the wet pumpkin mixture into the dry mixture and mix gently just until combined.

  • Divide batter evenly amongst the muffin cups.

  • Bake for 18-20 minutes until a toothpick inserted into the corner of the muffin comes out clean. Allow to cool for 5 minutes in the pan then transfer to a cooling rack.
